Spicy garlic chicken

My recipe for spicy garlic chicken made entirely from dried herbs and spices for convenience.

1 packet chicken thigh fillets – about 700 grams
4 teaspoons garlic powder
3 teaspoons brown sugar
3 teaspoons chicken stock powder
Salt
3 teaspoons flour
1 teaspoon hot cayenne pepper
1 teaspoon paprika

1. Slice chicken into smaller strips
2. Marinade in garlic powder, chicken stock, salt and flour overnight
3. Stir fry chicken and add brown sugar. Cook until sauce thickens, but not so much that the chicken over cooks.

Mum’s chicken wings recipe

1kg chicken wings
1 teaspoon salt
2 tablespoons ABC sweet soy sauce
1 tablespoon soy sauce
1 teaspoon wasabi
1/2 teaspoon chicken stock powder

1. Mix all ingredients and marinate overnight
2. Preheat oven to 180 degrees
3. Cook in oven for 15 minutes
4. Switch oven off and leave wings in the oven for 10 minutes

Bacon jam

1 pound home made bacon
1 cup finely chopped onion
2 medium cloves minced garlic
1/2 teaspoon cayenne pepper
1/2 instant coffee (use 1.5 teaspoons in 1/2 cup water)
1/3 cup apple cider vinegar
1/3 cup brown sugar
3 tablespoons maple syrup
1/3 cup whiskey

1. Cook bacon (my bacon isn’t fatty so not much fat gets rendered out)
2. Remove bacons from pan and brown onions and garlic. Add cayenne pepper.
3. Add coffee, vinegar, sugar, maple syrup, whiskey. Bring to boil.
4. Add bacon.
5. Simmer on low until caramelised and jam like.

Shepherds pie

Basically took the recipe here, added peas, beans chopped carrots to the mince and added chicken stock and milk to the potato mash.

4 small potatoes
Handful of peas
Handful of beans
Couple of carrots
500gm mince
2 beef stock
Teaspoon of vege or chicken stock
Butter
Milk
Cheddar

1. Cook and mash the potatoes
2. Add salt and pepper to taste, then add grated cheddar cheese, milk and butter. Add vege stock. Taste.
3. Brown onion and garlic in saucepan.
4. Add mince
5. Add diced carrots, peas and beans
6. Add flour
7. Add water and beef stock, cook until it thickens
8. Assemble.

Beef jerky recipe

Experimenting on various recipes online, I found that wet marinades didn’t really provide the herbs and spices kick I wanted, and dry marinades didn’t give enough evenness of a wet marinade and I couldn’t use liquid smoke with it.

This is my recipe (give or take several ingredients depending on what I have available.

Ingredients for the wet marinade
1 cup Worcestershire sauce
1 cup soy sauce
2 teaspoons liquid smoke
2 tablespoons honey

Ingredients for the dry marinade
1 tablespoon parsley
1 tablespoon oregano
1 tablespoon cumin
1 tablespoon paprika
1/2 teaspoon hot cayenne powder
1 tablespoon onion powder
1 tablespoon garlic powder
1 teaspoon Prague powder 1

Method
1. Slice beef thinly – helps to freeze it partially before hand
2. Mix ingredients for wet marinade and marinade beef for several hours / overnight
3. Mix all dry marinade ingredients together
4. Remove beef from wet marinade and sprinkle with dry marinade.
5. Stick a piece in the microwave, zap and then taste test. Add more ingredients depending on what it tastes like.
6. Stick in dehydrator and wait.

Nachos cheese sauce

15 g butter
8 g all-purpose flour
120 ml milk
1/2 cup tasty cheese (original recipe calls for processed American cheese)
Salt to taste

In a medium saucepan over medium heat, melt butter and stir in flour. Pour in the milk and stir until the mixture thickens. Stirring constantly, mix in cheese and salt. Continue to cook and stir until cheese has melted and all ingredients are well blended, about 15 minutes.

Add in a dash of chili sauce and paprika for colour.
