1 pound home made bacon
1 cup finely chopped onion
2 medium cloves minced garlic
1/2 teaspoon cayenne pepper
1/2 instant coffee (use 1.5 teaspoons in 1/2 cup water)
1/3 cup apple cider vinegar
1/3 cup brown sugar
3 tablespoons maple syrup
1/3 cup whiskey
1. Cook bacon (my bacon isn’t fatty so not much fat gets rendered out)
2. Remove bacons from pan and brown onions and garlic. Add cayenne pepper.
3. Add coffee, vinegar, sugar, maple syrup, whiskey. Bring to boil.
4. Add bacon.
5. Simmer on low until caramelised and jam like.
